Green Chartreuse, as it should be. When the monks are being stingy, Boomsma Claerkampster Cloosterbitter steps in. We cope admirably.

House decree. A Luxardo cherry. Non-negotiable. Neon red cherries belong in Shirley Temples at the kids’ table.

Paper Plane

Bourbon / Dark Arts

Bourbon · Aperol · Amaro Nonino · lemon

A small escape without leaving the good chairs. Bright, bittersweet, and considerably more civilised than air travel.

The garnish. A Luxardo cherry, served in a chilled coupe.

Dirty Ass Martini

Vodka / Chopin

Vodka · olive brine · blue cheese olives

Clear liquor for clear decisions. Immediately compromised by a thoroughly unreasonable amount of olive brine.

The garnish. Blue cheese olives. Divisive in polite company; very welcome here.

Old Fashioned

Rye / Angel’s Envy Rye

Rye · bitters · sugar · one proper cube

Yes, rye. A little sweetness, a little spice, and an excellent excuse to settle into the good chair.

The garnish. A large ice cube and a Luxardo cherry.

Traditional Margarita

Tequila / Fortaleza Blanco

Blanco tequila · orange liqueur · lime · salt

No blender. No strawberry purée. No nonsense. Just tart, salty perfection with a rather good tequila underneath.

The sensible alternative. Espolòn Blanco, if the AC bill has opinions about the Fortaleza budget.

The Negroni

Gin / Sipsmith London Dry

Equal parts gin · Campari · sweet vermouth

Bitter, unapologetic, and aggressively balanced. Rather like a terrier guarding the front door.

Liqueur / Licor 43 & fresh espresso

Licor 43 · freshly pulled espresso

Coffee for the next raid. Vanilla for the late-night conversation. The pugs will still expect your undivided attention.

A terrible alternative. Vanilla extract in cold Folgers. A cry for help, not a substitution.
